At Blue Moon, we bake matcha into everything — croissants, basque cheesecakes, tiramisu. But these matcha cookies are the recipe our team reaches for at home because they're dead simple and the matcha flavour actually comes through (which is where most matcha cookie recipes fail).
The secret is using the right blend. We use Carnival Matcha Ujikumi — our baking and café matcha, designed specifically to survive oven heat without losing its colour or flavour. Most matcha turns brown and bitter when baked. Ujikumi holds its green because it was selected for exactly this purpose.
The pairing is what elevates this from "nice cookie" to "an experience." Serve these alongside a bowl of Komorebi koicha — thick matcha whisked with minimal water. Komorebi is our most premium blend: layered umami, natural sweetness, zero bitterness. The contrast between the sweet baked cookie and the deep, concentrated koicha is the same principle behind Japanese wagashi and tea ceremony.
