Our newest 8" cake features Carnival Matcha Kaze — a dark roast hojicha from Uji Kyoto — baked into a light, cloud-soft genoise sponge, layered with fresh whipped cream and seasonal fruit, then finished with a dusting of hojicha powder.

What does it taste like? Think toasted caramel and roasted nuts, but in cake form. The Kaze hojicha brings a deep, warming sweetness — almost like toffee — without any bitterness. The sponge stays light and airy so the roasted flavour comes through clean, balanced by the freshness of cream and fruit. It's rich without being heavy. Comforting without being dense. The kind of cake that surprises everyone at the table.

Hojicha is roasted Japanese green tea — same plant as matcha, completely different experience. Low caffeine, naturally sweet, and unlike anything you'll find in a typical Christchurch bakery. We've been serving Kaze Hojicha Lattes at Blue Moon for years — this cake is the next chapter.
